Farmer's Market #6
We are up to number 6 right? I can't keep up. More food arrives every week before we hope to finish off all the older stuff. My refrigerator is packed right now and every little crevice is hiding a tomato. I've basically cut my diet to JUST vegetables and I still can't seem to make a dent in all of this. I guess food abundance is a good problem to have.
I made a nice pasta with that fat eggplant and the heirloom tomatoes. I boiled the corn and took it off the cob to add to a Mexican salad recipe. I'll be boiling the green beans for a summer salad tomorrow. I still have a bunch of squash that I don't know what to do with! Really, Internet. Please supply me with squash recipes! I'M BEGGING YOU.

Those veggies look so yummy!
ReplyDeleteIt's always so tricky to find recipes from farmer's marker baskets! You never want to waste the produce. I always, ALWAYS feel more guilty about it than the regular grocery store food.
