Farmer's Market #8


This basket was my favorite one of the past few weeks. Why? Two simple reasons. Eggplant and cabbage. We received one regular eggplant and one Chinese version. I cooked this up once again with Hoisin sauce and soba noodles. I have a very soft spot for cabbage. I love the texture and the taste. I cooked up the cabbage with some of the green beans, yellow beans and banana peppers. Also, look at that acorn squash! Isn't he precious?!


Thank you for all your comments last week about what to do with the corn. I was all ready to cut it off the cob and freeze it, when we saw caterpillars in the corn. All of our ears were buggy- so in the trash they went (after I had a minor freak out). I have been doing a lot with my  new dehydrator. I've made two batches of squash chips and a run of banana chips. The banana chips turned out great- and they were super easy. Cut bananas-do nothing to them-put in dehydrator- take out 14 hours later!

Summer produce is almost coming to an end. What are you making these last few weeks?

  2. Oh yummm, I looove going to to farmers markets, you got such great stuff! I've been making lots of sliced cucumber salad!
